short irons should tend to point right
mid irons should tend to be ever so slightly to even straight
long irons should be thin (browning of grass) and be straight

The reason they are curling left is you are swinging, no joke, just too far left through impact. You need to learn how to swing out to right field more. Something that took me a long time to learn. The more you swing out to right, the more the ball tends to draw. The more you swing left, the more it tends to fade. Short irons will do either less because there is more loft and more backspin. As you go down in loft there is less backspin and the possibility of more sidespin, hence the easier it is to draw/fade longer lower lofted clubs.
