Why an uncocked left wrist?

I have a slight tendency when hitting to get flat on my backswing and to come in under plane on the downswing.

One way I can correct this is to make sure the club is outside my hands on my takeaway, this gets me a little more on the correct swing plane. How ever to do this I need to maintain a little wrist cock on the backswing to make sure the club is staying out side of my hands. Will this work with a hitting motion or must the left hand be completely uncocked at setup?

The club outside the hands feel/image is a great way to keep the club from coming back inside, and one of the core advantages of adjusted address as a starting position for swingers. Starting at impact fix can lead to taking it too inside, so your compensation of 'low' hands does help that issue. That said, as a hitter, it may lead to some blocked shots.

Try focusing on the right forearm/wrist angle and the right forearm pickUP from impact fix. Practice that move with your back up against a wall (slowly) to get the feel for UP.
