I've used Computer Coach for years, but I heard they're no longer in business. We use JC Video at the Barclays, and it's very easy to use. And, lastly there is a very inexpensive but complete software package from Motion Pro: http://www.motionprosoftware.com/index.htm

Cameras:
From personal experience, the best that I've ever owned is the Panasonic PV-GS500. It was the last of the pre-HD models, and it was rated the best in it's class. The picture is superb, because of the 3CCD sensor. It's virtually a news camera, in the size of a small camcorder. It has easy to use aperture and the shutter speed goes to 1/8000.
